So I just found a bottle of Goose Island's Matilda at a restaurant. It is their first Belgian style ale that I have tried, Matilda being their version of a Belgian style pale ale. And it was fucking amazing. The yeast was good and funky, but this was more sweet and sour than your average IPA. Almost like a lambic. There was very little head on the beer, but it was actually quite bubbly. The color was a nice sunset paly orange (seriously, the prettiest beer I think I have ever had). This was a 2010, and like yours, I really saw where it could have grown from some aging.
