Except they kind of do. You're just looking into a window, same as before. The illusion of depth is enhanced and That Is It. You can't tilt your head and look at the side of something, you're still looking at a two dimensional image.

Are we talking about a Mario 64 or a Super Mario Brothers?
Any game that uses a 3D space benefits from surround sound. 2D games not so much, though it's not much of a stretch to have things fly from behind the player's POV towards the character which are anticipated by audio cues.

It's an enemy that has to touch you to hurt you. If he is so far away that you cannot see him on screen, he is not an immediate threat.
You can even see immediately behind you in almost all third person games.
Keep in mind I am not discounting the value of surround sound at all.
It's a lot easier to understand where your character is in space with 3D. It's noticeable in PilotWings and Zelda.
