Any consoles using a DAC to output audio can theoretically output pure optical audio. There are mods in English for the SNES, Saturn and Dreamcast on GamesX's page. I believe there is something on his forum for the PS1 as well. On Japanese sites, there are instructions as well which use a different chip which is what most of mine are based on. The Gamecube mod actually uses the component or d cable as the DAC is in there. I've never seen anyone outside of Japan do this mod so props to the guy (acem77) who did it for me.
I still haven't seen anything on the Jag, 3DO (not like anyone but me would care) or N64 (some homebrew devs have told me that it should be possible). Famicom/NES, PCE, SMS/GG, MD, Neo and Neo CD are not modifiable unless you throw in an ADC somewhere which defeats the purpose.
There's a guy on GamesX who has done optical mods on some arcade PCBs like the SPI and F3, those are next on my list to try out. Undamned on shmups says he has done CPS2. I imagine Naomi must be very very similar to the DC mod. Anyhow, many more things to try out...
EDIT: The SNES optical mod doesn't work for the Super Game Boy since it passes through audio from the cart port straight to the analog output.
