None on the menu - but I am using some powders on various things.

If it's something I have access to quickly then I can have some of these things as off menu offerings. Like the popcorn/orange. Doesn't take but a minute to put it together.

So, The Owl is a pretty different restaurant now. The burgers/fries/shakes concept has changed entirely.



This is what the opening dinner menu looks like now:

garam masala / honey / pistachio

Why the change?

Sustainability. The supply lines for the amount of beef we would have wanted to use isn't there for local product.

It just started to evolve as we saw what was available to us.

Commercial Waring waffle iron with pork fat replacing the butter for a savory kick - a little thyme or rosemary in the batter.
