AGAR! I have just discovered agar and it's my favorite thing in the world. I bought the powder at a japanese market and so far have made a simple fruit dessert with it and I tried to make a cola based one but that didn't work out so well so i'm thinking i'll move over to a soymilk based one with some sort of fruit.

Yeah, we've been having trouble with spherifying orange/grapefruit juice.
Probably need to xanthan it up more for the alginate bath.

ahhh, i see! well, i'll continue my experiment - the weird mexican recipe i got it from used diet coke and it seemed to work for them but i used regular. It's ok though! And oh, orange juice doesn't work so well either? I'll remember that, I used apple juice and it worked fine but that's nowhere near as acidic.
