Depends on how far down the rabbit hole you want to go. Any 90's pioneer or Panasonic player will give you a reasonably good quality out of the composite jack, as long it's paired with something that has a good comb filter. With the right software and capture device I've heard the PC can crush even expensive video processors, but I'd have to look up to see exactly what the people who know recommend.
A quick and dirty method would be to use a DVD recorder with a good comb filter like the Panasonic DMR-E15 and make a DVD with it, then rip the DVD.
A quicker and cheaper method would be to download them off of the internet.
So, I just agreed to buy another laserdisc player. This is number 6.
