... I don't like to flood, ...
It would really be better for you to
"flood" the board with sensible threads than to cram many very different topics into one thread. Since the thread title set by the first post is the one that shows in the index/list for the board, having the topic wander all over makes the thread useless for other people.
... is it possible to place more than the maximum number of ... buildings in the game while in editor. ...
I think TeamStar gave you an excellent, specific answer. I will only expand on it a bit. Being in
editor mode inactivates
ALL restrictions / requirements on
placing buildings. For example, you may place a building which requires electricty without having an Electric Power Plant -- and so forth for all the various requirements. The difficulty is that when you start playing again, buildings which don't have the requirements in place (or exceed allowed numbers), simply don't work or introduce erratic results - including crashes.
... If my economy difficulty is set to low will my farmers take in more food? ...
Yes, but probably not a great deal more.

That's consistent with the rest of the game, but it might be especially true with this setting. There is no easy way to assess its impact and compare it to other game settings."
The Farmer Trait is known to cause Farmers to work 50% faster; there is no quantification for the change in economic difficulty. There is only a presumption that
Harvest from farming and fishing is greater on the easier levels of economic difficulty.
Generally, don't jump to conclusions.
