As I understood it - each version has different bonus characters. Are there any completists out here that will get all three versions?

-I don't need to pay 100 bucks to play as two more worthless, out of place characters. I'm sure I can find something else worthwhile to waste my money on.
I'll be getting the PS2 version. I don't particularly care about the extra characters, and by that time I should have a good arcade stick. Even if I don't, the PS2 pad is by far the best for fighting games.
I'll get the Xbox version first, maybe pay $40 or so for that, then wait for the other ones to hit $20 get get them.
I still have no idea as to which SC2 is worth playing. Aside from exclusive characters, will there be any differences? Like will the XBox/GC versions look better than the PS2, will the XBox or PS2 versions have downloadable content, etc.?

No downloadable content that we know of.
The only differences, aside from extra characters, are resolutions and such -- the GC rev will look better than the PS2 rev due to higher polys, etc.; the Xbox rev will look better than the GC rev for the same reason.
