I just beat it about an hour ago, and the ending was great. Didn't make up for the lackluster level design, but I really enjoyed the last hour of the game.

Okay, so I finally finished the game first time through. A little late to the party, but, I'll share my thoughts [SPOILERS -as if it mattered in this case]:
Gameplay: Overall, tight enough and providing enough options to keep me entertained and playing, which is good. Granted, this is with liberal use of some FAQs, so I could find everything and see everything the game had to offer. Even with the FAQs, there was enough backtracking and repetition that if the aesthetic values didn't pull me in, I'd have grown bored. I don't think the levels were designed well enough, and the secrets too obscure, that I would have had as much fun without the guide showing me where to go (which is unusual, but there it is).
Graphics: Pretty bland to start, but, after a few hours I liked them a lot. The textures in this game are amazing, many of them standing as fine pieces of art on their own. Later in the game, I was literally in awe of some of the texture work, combined with some neat (but simple) lighting effects. Animation was decent but not spectacular, and as everyone has said, the level design was really bland. I don't see how anyone can compare it to DMC. That game had you all over the place with some cool geometry, CV rarely has anything in a room at all, except enemies, and even then maybe only half the time.
Music/Sound: Both great...although the music completely outshines the SFX department. Haunting and carefully crafted tunes that just scream Castlevania. Sound effects were generally good, sometimes memorable, but not quite as unique as the 2D counterparts (I just really liked the bizarre moans and death sounds of the 16-bit games...sometimes sounding very artificial, but still unique and fitting). The music, combined with the great ambience generated from the textures and lighting, kept me going when the gameplay wouldn't.
Story: Lame, lame, lame. It was applied only sporadically, and when it was, the lines, voice-acting, and character-acting were all so (again) lame that I just wanted it all to stop so I could get back to the moody action. Moments that were meant to be meaningful, or emotional, were just plain cheesy and forced since they didn't really bother introducing the characters properly or integrating them into the narrative. Frankly, the vague, simple stories of earlier games (not that this story was complex by any means) let the imagination fill the details at least.
Characters/Monsters: I liked the design of almost all the enemies...they were great, reminiscent or homages to past monster designs. I would like to have seen more of course, but, it's a great start. The lead character looked good in action, but his hair and face annoyed me. Walter was cool I guess, but Sarah...blech, terrible modeling and character. Mathias was cool in a Final Fantasy sort-of way, but they just threw him in there and he never did anything...mmm...cool. I did enjoy Death's cameo though. Some of the boss battles, while almost always easy (due to items) were fun though (especially the big hidden one -very SOTN'ish).
Overall: Like others have said, if not for the "Castlevania" elements and heavy atmosphere, I would have lost interest much sooner. As it was, obtaining new abilites and seeing new things was enough to keep me entertained...I eventaully collected all the relics, orbs, abilities, and items (I think), and have 100% at about 12 hours. I'm happy with it as a $33 purchase, but, not exactly happy with what it introduced into the CV lore. Another PS2 CV though would be highly anticipated though.
Finished it a few days ago. One word: Boring. I really had to force myself to finish it, hoping it would get better. :( I doubt I'll go back to get the remaining few % I missed. Oh well....
