Fats are proteins. Your body either uses the protein, or pees it out (which is why constipation is a huge danger in the Atkins diet). You don't retain any of it. Carbs, on the other hand, are complex sugars, which are stored as body fat if they aren't entirely consumed and used by the body.
Also, the Atkins doesn't totally remove carbs from your diet, but strictly limits them.
And cholestoral isn't a problem so long as you make sure to eat meats with a low LDL count.
