Make sure you click through the slide show. This would be great for server rooms, and total-immersion CPU cooling, if it doesn't interfere with electronics. Amazing.

my question is, if you're taking a bath in sapphire, and someone drops a plugged-in hairdryer in your tub, do you get electrocuted?

I really don't see how this wasn't discovered years ago. We've had dry ice since so damn long ago.
