Developers are only just beginning to work with unified shaders, and those clips were probably running from dev systems..
Brief, lo-res vids of hi-res games don't tell the whole story. The games may not look all that great at first sight, but I'm sure there are a lot of cool effects that have yet to be implemented or are too subtle to notice in those tiny clips.
Things like depth-of-field, more realistic lighting, and universal HD support are the kinds of things you just take for granted until you get used to them and then go back to older games that don't have them.
