well, drinking in itself dosent violate any christian teachings. The first miracle jesus did involved wine, its overindulgance thats the morally dodgy part, that and the actions that tend to go with it, but drinking itself is not inherently sinful.

These monks are intelligent businessmen. While they say they don't want to increase production because it isn't a priority (and this is probably true), I think that they really just realize the concept of supply and demand. They could probably raise the price by a third and it would still sell out.
