Since the last thread was labeled "circa 1995", I don't think I listed anything past 1996. Here's some stuff from after that that comes to mind -
For RPGs, Planescape Torment is the best but since you already have it, you might want to check out Anachronox, a console-inspired game. I never played far into it but it seemed cool. I wish my current PC could run it. It either doesn't like XP or my video card. Icewind Dale's worth checking out.
For adventure games, I recommend The Last Express and The Longest Journey. I'm sure people will hate me but I think Grim Fandango is a little overrated among LucasArts games although I still like it. A lot of people love Sanitarium although I lost interest after a few hours.
For third-person action I loved Drakan at the time. I don't know if it has aged well. Outcast got lots of praise; I didn't get into it but I would like to try it again. The Max Payne games were great. I dug Heavy Metal FAKK2. Recoil was a cool tank game at the time. I loved Giants.
For strategy, Starcraft's the obvious one. Sacrifice was a unique RTS/RPG mix. Battlezone was my favourite one since I'm not normally into the genre; it was a hybrid of action and RTS.
It's a shame that SSJN gets motion sick from first-person games because 1998-2000 had some of the greatest ones. Deus Ex and System Shock 2 are still the best FPS/RPGs around. The first two Thief games were among the best stealth games (I assume they still are but I haven't played them recently). No One Lives Forever, Requiem and Shogo were a unique FPSes. Unreal Tournament was amazing for multiplayer although there have been newer versions since.
