A minor derail, but I could not STAND The Killing. I love crime dramas, even awful ones, and that was one of the worst shows I'd ever seen. I don't get why people like that one....but I love Dexter, so perhaps we have opposite taste.

Hannibal gets pretty gruesome, I would think it would turn off an older crowd. It's pretty amazing the gore they put on TV now, stuff that I would never imagine seeing outside of an R horror film 10 years ago.
I love The Killing also. So far, season 3 is shaping up nicely.
The subject matter may be similar, but the way it's handled is a complete 180 from Dexter.
I just watched the "banned" episode (which is available on itunes and other various places) which was pulled after the boston bombings. It's by far the best episode of this season and explains some things I was a little "huh????" on. I highly recommend watching it if you've been following the series.
