I liked the snow level in Goldeneye. The music and the soldiers in the snow cabins really added to the atmosphere.

and well, i liked the Erasmus' snowy mountain area and Brauggi's area in Hero's Quest 1: So you want to be a hero? but more for the memories then the actual setting i guess, i would have to play it again. (i am speaking of the prettiness of the Remake of the game btw [Quest for Glory])
SSX Tricky: Untracked, calming and oodles of fun to just play around in.
SSX: i think Snowdream was nice, cant recall, but i remember a level with snow at night, with the lights reflecting off the snow.
Secret of Mana had a gorgeous snow level as well. brain overload. snow levels make bad games good.

You beat me too it, that music has the power to heal wounds.Ristar's snow stages are the best for 2D games. It even has a friggin' snowball fight. How cool is that.
