Neither Babbages, Gamestop, Funcoland or EB carry sticks that can be considered top of the line. Although Ste-von reports that he hasn't used any of the sticks, here are his recommendations with some personally added by me. Additional comments to update this thread welcome.

Note: Most of the sticks are currently only available for PS One/PS2. Converters can be obtained at your local import shop, Lig Sang or Video Game Accessories.com. (Additional locations and websites will be added if any one provides other selections.)
Adapters

Notes: (according to SRK source)
1) saturn pad - worked perfect, no reconfig needed - EO mode wont work
2) psx dual shock - worked perfect, may want to config buttons.. i liked the default setup ok tho. - EO mode works fine
3) psx ASCII Stick - worked fine, tho the buttons are mapped all over the place. definitely needs a button reconfig. no biggie tho. EO mode wont work.
4) DC ASCII stick - fierce buttons do not work. EO mode does not work =( basically only 4 buttons work, you can remap them if you wish, but you will be out 2 buttons
Overall: Any stick/pad with no or single analog sticks (basically everything but the psx dual shock pads) will NOT be able to use EO mode. Of course, if you are using the adaptor you probably will not be wanting to use EO mode anyway.
Other alternatives?

If anyone already owns a custom-built joystick or MAS stick, check out http://members.cox.net/joysticks/ for instructions on how to add an X-Box PCB to your stick from a Madcatz controller. Not my site BTW, stole the link from the custom arcade joystick thread on regular forums. A SRK member tried it out, using his MAS which now has an X-Box plug with a memory card slot for the communicator sticking out of the back. You'll need soldering skills, but it won't be nearly as expensive purchasing a totally new stick and then getting adapters which aren't guaranteed to work.

Seeing as these were developed before Xbox Live. No. I am sure third-party developers are working on new peripherals though.
I'm going to try the Pelican Trick Stick or the Reflex arcade stick today and try one of them out. It couldn't be any worse then the XBOX pad is for me. I'll report later.
I am told the Relex stick sucks balls, to put it loosely. Try before you byy if you can...
Pelican is also apparently meh.

on the namco arcade stick... I didn't see it, though I did see an ASCII one for that price. It still looks good though :]

Another verification here too- this thing really sucks -- I can hardly do any specials when Im on the left side of screen facing right ( and its not because im dislexic or righthanded or whatever - the fucking stick just doesnt register any quarter circle forward and to the right inputs) And supers -- God I have to go apeshit on the controller to pull one off facing right -- but no problems at all while im facing left -- err... < changes XBL tag so local TNL 'ers dont take advantage of this fact
