God blessed my school system with January finals. Ah, so wonderful...

I have finals in two weeks, I don't think it will be too bad. Two of them are just regular tests, while the other three are in easy courses.

I was originally supposed to have finals next week but Hurricane Isabel pushed our schedule a week back consequently taking a week off of winter break.

My finals begin the 15th. I need them to be over, now.

I got finals next week. Besides having written finals I also have to do a chocolate pipeing test and a pastry buffet for my final.

On my buffet I have to have
- a chocolate show piece
- a sugar show piece
- a wedding cake showing gum paste and fondant work
- a nougatine piece
- a decorated cake with piping skills shown
- 2 petite' four glace' on different variety and piping work on them
- 3 different varieties of petite' four's either sec or frais
- 2 different varieties of confiscierie
- 2 different varieties of mini pastries

and I think thats it...then we are judged on our presentation and items.

Got a lot of work this week and next...whew.

Dude, you're in cullinary school?! That's awesome. I've been thinking about hitting up the French Cullinary Institute after I get my management degree.

I have a regular test tommorow and a final on tuesday next - what puzzles me is that all our tests have been cumulative so far, so whats the point of the final... guess i outta find out.
