Parappa, Umjammer and Space Channel 5 Part 2 are the ones I enjoyed the most because of their weirdness factor. I have a certain nostalgia for Break Dance on the C64 although the game annoys me.
Peripheral based: Probably a tie between Samba and Karaoke Revolution 3
Controller based: Gitaroo Man (though Amplitude, Frequency and SC5 are damn nifty)

Heavy tie between IIDX and Pop'n IIDX really started to improve after 6th style, but Pop'n has been solid for a while.
Samba De Amigo, if I'd ever break down and buy some maracas... Until then, Space Channel 5. The first one, that is. The one without all that gay singing crap...

The only one I bother playing is DDR-whatever-mix. Everything else is just a variation of the button-pushing found in other genres, but without any violence or gameplay or anything. DDR on the other hand can be physically demanding, and actual exercise if you play long/hard enough. I gotta respect that, even if half the songs on every mix I've played are trash.
