I'm really interested in getting one of these games. I'm intrigued by the scary atmosphere of Doom 3, but like the premise of SC better. What is the general consensus on these two games? And I'm an admitted graphics whore, so which one wows you in the visual department the most?

I'm assuming you're asking about the Xbox versions.
If you have Xbox Live, go with Chaos Theory because of its Co-op and Versus modes. If you don't have LIVE, go with Chaos Theory anyway because the single-player mode is really, really good. And the graphics whore in you will be amazed by the SC:CT engine.
I'd wait until Doom 3 Xbox hits $20. SC:CT is the better value and worth the $50 ($55 if you get the Limited Collector's Edition).

I didn't know I had a theory on either.
SC has infinity +1 more replay value unless you're like me and you want the older DOOM games on live.

DooM 3 goddamn it.
You get Ultimate Doom, Doom II: Hell on Earth, and a incredible port of Doom 3 (which is, in some ways, better than the PC version) all on the same disc.
