I switched from a 1080i CRT to a 720p LCD about a week ago.
Mines on 720p on a DLP set. It can upscale to 1080i, but I keep it on it's native 720p. I can't see any significant change between the two.
I think it depends on the game though...I should try switching it for tonights gears session.
I play on a 1080p LCD monitor. I have the resolution set to 1920x1080 with the VGA cable and the picture looks sharp and beautiful. So, so beautiful. I had it set to 720p at first, and that looked about the same, but most of the video you get from the Marketplace doesn't go above 720p anyway. I haven't watched any HD-DVDs.
I have an LCD HDTV and I run games at 720p. 1080p was a lot more expensive and seemed pretty superfluous to me at the time I bought my TV, but it honestly looks beyond gorgeous. It'll make you lol at the Wii time and time again.
The biggest thing I notice when I play on other people's televisions are the massive scanlines marring up every game I play. It's pretty jarring to see now.
I was always under the impression that 720p was better than 1080i, but I don't really know much about this shit. Honestly, if you're getting a 360 you need to run it in progressive scan or it's a massive waste. If you're going below 40" go with LCD, over 40" go with DLP.

I just like to say I don't own an X-Box, either.
Also on a 720p LCD through VGA. Looks incredibly sharp and just beautiful. Makes the TV purchase more than worth it.
