The original RCT so far exceeds Theme Park this shouldn't even be considered. Not sure how well the DS could handle RCT, but still.
Well lookee here.
This has always been one of my favorite sim games, and although Rollercoaster Tycoon surpassed it it's still tons of fun, and is a natural fit for the DS. Between this and Sim City the system is looking nice for management sims in the near future, and oddly enough EA is to thank for it.

Speaking of management sims, someone should get on bringing Theme Hospital to the DS.
That would be pretty fucking hot.
Theme Park holds up well when played in quick bursts now, but I can't see myself paying $30 to play it on DS in 2006. If it was bundled with Theme Hospital for that price, I'd buy it.

This came out recently, and it's pretty much a perfect port. If you're a Theme Park fan you'll like it.
Now bring on Theme Hospital.

Age of Empires was changed pretty heavily for the DS and plays more like Advance Wars than anything, and the Zoo Tycoon port sucks. This is by far the best PC style strategy game on the system so far... the interface is great and the lower resolution doesn't pose a problem at all, though that's probably helped along by this being an older game in the first place.
