I play against Astaroth all the time online. His 6K is a great move, but it's not safe on block. Astaroth players become heavily reliant on it when pressured, and they all expect it to hit as a counterhit. I find I can bait it out pretty easily and punish on block...once there cautious about using it, they're game's usually off enough for a win.
I think Astaroth's real danger comes from his throw range and versatility (air throw, crouch throw, ground throw, hop throw, jumping throw). Compared to someone like Amy, you can grab a lot of people who think they are safe to block.
His other money move is 1A, and 1A(H), A or B. It's pretty fast, has lots of range, easy ring out, tons of Soul Gauge damage...pretty stupid overall. It's usually too risky to Guard Impact online, but people forget that hopping moves will go over his 1A. Hopping moves are actually pretty handy for other problem low attacks too, like Ivy's (coiled)A+B, A and Taki's 9KKK. It seems like you're immune to the low attack the instant you enter the command, and not necessarily when you're at the peak of your jump.
