  1. I forget whose curry I made, but I doubled it, and it was really spicy. Used some of my grandma's spice recipe though since I don't buy curry powder. Still really good though. Going to try some again this weekend without it being so hot. A few of my friends really liked it, and a few of us couldn't handle the spice, haha.

  2. You can cut the spice in any dish with plain yogurt (where appropriate - in a curry it should be fine).

    I bought a cheapo BBQ. Made burgers with parmesiano reggiano, a dash of worcestershire sauce, salt and garlic powder mixed in the meat. The parm really worked wonders.

    In fact TNL, if you only listen to one piece of advice on cooking, listen to this: Go to Whole Foods and buy a block of real parmesanno reggianno cheese and a micro plane to grate it. It'll cost you $20 total and will be the best thing you ever purchase involving food.

  3. The curry I made had chicken stock, not yogurt. Where's a decent one with yogurt? My one friend likes it thick, so I'm thinking that'd be the way to go.

    Parmesiano reggiano is one of my standby cheeses, and that sounds like an interesting way to use it. I typically like my burgers really simple; salt, pepper, minced fresh garlic and onion at most, but I think I'll try it out next time I make some.

  5. Last night, I came up with a fantastic Cajun Chicken. I made up my own batch of Essence of Emeril years ago. So, last night I used the remaining batch for a rub.

    Here's the ingredients for Essence of Emeril.
    • 2 1/2 tablespoons sweet paprika
    • 2 tablespoons salt
    • 2 tablespoons garlic powder
    • 1 tablespoon freshly ground black pepper
    • 1 tablespoon onion powder
    • 1 tablespoon cayenne
    • 1 tablespoon dried oregano
    • 1 tablespoon dried thyme
    Preheat the oven for 350 degrees. Yes, roast the chicken.

    So, I took my chicken and placed it in a bowl/container and coated the chicken with this rub. Then I placed the chicken in a roasting pan (or a large rectangular cassarole pan)and a teaspoon of oil on each piece of chicken (in my case 6 for the 6 drumsticks).

    Set the timer for an hour or two*.

    At the half hour mark, take out the chicken and dab on each piece your favorite salsa. Make sure the salsa is blended, so its more like a sauce rather than something to dip. Put the chicken back in ...

    Continue cooking. For the remaining time.

    Take out and eat. Its awesome.

    *cooking time depends on size of chicken and what parts of the chicken you use.

    Yes to this. I only use the real stuff and it tastes WAY better. People will actually ask me "Wow, this is great, what kind of cheese is this?" and when I tell them parm they don't believe me. The fake shit doesn't taste the same at all. My ex actually prefered the fake shit and told me I was a food snob (which I am a bit) for using the real stuff. His favorite dish was this "casserole" his ex-wife used to make:
    -shredded chicken
    -two cans of cream of chicken soup
    -crushed Doritos
    -topped with shredded American cheese
    -bake until it looks like puke
    He hated it when I cooked anything he deemed "fancy" and told me I was a terrible cook. I can't wait to get back and cook for real again without somebody making me feel bad about it.

    Advocate that dish sounds great! You should invite a chick over, cook for her then reap the benefits!

    I learned something like this from my mom that is... kind of similar to this but is delicious and not gross.

    Basically, boil several chicken pieces, or entire chicken with carrots and celery, take out the chicken, boil egg noodles in the broth, shred chicken, add broccoli to broth, drain, stir in half a can to a can of cream of chicken soup, pop in a casserole dish, cover with shredded cheddar and bake.

    Pretty good sick or rainy day food. I don't see how Doritos would would be tasty in that equation though, that's gross.

    Animegirl, that guy that you dated sounded like a complete dbag. To tell someone that they are a terrible cook is like saying they are terrible at sex. It's just a fucking low blow, especially since you're trying to do something nice for the person on the receiving end.
