I made Galaxy Nachos, and margaritas last night then watched The Magnificent Seven.
It was pretty rad. I make good nachos.
They're just Nachos. There's is no sure fire way to delicious nachos, because after the basics you just put what you like on them.
But my nachos go like this:
Pre-bake chips to keep them from getting all soggy, 3 or 4 minutes, don't want to burn them.
Cook up som ground beef with spring onion, garlic, and a mexican spice rub I bought at whole foods a month ago
Add beef, refried beans (or black beans), and cheese (I tend to use Monterey Jack, but anything melty). Bake again until all melty.
Remove, add sour cream, peppers, salsa, guac, some green onions. And eat.
Best when coupled with a movie like Conan or Evil Dead 2.

That's a sure-fire way to start up an asstastrophy.
I've never really had a problem in that department but it certainly IS a sure fire way to make you an enormous fat fuck.

Here's what went into the cheesecake last night:
3 8-oz containers generic neufchatel cheese
3/4 cup sugar
1/2 cup heavy cream
3 eggs
1/2 tsp almond extract
1/4 tsp vanilla extract (I would add more, but it's all I had)
Mix it all together, dump it into a pie pan (I used a glass one), and bake at 300 degrees for about 50 minutes. If you want a perfect, pristine top, I hear you should put the dish in another baking dish with about 1" of water, aka water bath. I didn't care about this, since I planned on having a strawberry topping (I ended up not). It cracked, but it wasn't a big deal.
I didn't mess with a crust, since my mom prefers crustless. I also erred on the side of less sugar, since we both like desserts more mildly sweet. If I had a lemon, I would have put about a quarter teaspoon of zest into it as well. I like how it turned out, and the almost extract gave it a unique flavor, in a good way. I cooked it for about 55 minutes, but the outside wasn't as creamy as the center was, so I changed the cooking time above.
^----- They're still just nachos. I don't remember what exactly they put on the Galaxy Nachos in the book though, the most important thing I took from it was the name and pre-baking the chips.
That achewood cookbook was actually a great first "I don't know how to cook" cook book.
