Jedi Knight is still pretty fun to this day (I beat it and Jedi Outcast about two summers ago) because it's got a steady frame-rate and good controls.
Goldenye/Perfect Dark are lacking in both aspects, but even then, they were still better than anything else you could play on a console until Halo hit the Xbox.
Point is, for people who weren't playing PC games online in the late '90s, the Rare shooters were the best available option, by far.
