Thread: Let's Cooking: TNL!

  1. Scanpan. It's made the same way as All-Clad and half the price.
    Boo, Hiss.

  2. Campbell's Chunky Grilled Chicken and Sausage Gumbo is so fucking awesome I can't describe it. And it takes 2 minutes to heat up.

    SOUP = YES

Can anyone recommend a good large pot? Are brands in any way important for this kind f thing?
I asked Jonas this question when I bought mine. For boiling water he said no, not really. Having something with a thinner bottom will help the water rise in temp faster, but you won't notice the difference on most electrical household ranges. Just get something deep and, if you're feeling crazy, maybe a built in strainer. When you buy REGULAR pots you want something with an even base so things cook evenly so brand and quality is a lot more important. He recommended me a pot that didn't weigh a million pounds since it will already be super heavy once the water boiled.

If there's one thing Jonas is good at it's cooking. He's never steered me wrong in the culinary world.

  4. I want to make some gumbo. Some serious southern creole stuff.

    Any good recipes?

Actually what I'm most interested in is what the hell to do with a whole chicken if I buy one. How to cut it up and what parts to use for the gumbo and whatnot.

southern food isn't very technical. I'm sure there are multiple ways to cook the chicken for the gumbo and each one would taste pretty good

  6. Wow, I just tried some Old Bay on shrimp because I'm allergic to horseradish so I can't do cocktail sauce and I don't like plain shrimp enough to enjoy it alone, and it is damn good! Apparently this can go on a whole bunch of shit to spice it up, I'm going to have to experiment. First impression =

Old Bay is the truth. I put it on everything.

Also: today I found my grandmother's spatula. I thought I lost it about 5 years ago. This spatula is the only way to flip an egg. Its almost invisible when you look at it from the side. I made an omelet two days ago and cursed my maker because I didn't have this spatula.

This is a red letter day.

  8. Josh - for the boiling pot, go to goodwill.

All this food talk is making me hungry. Advocate that meal sounds delicious but it needs color.

When am I gonna start seeing you guys down here??

    Old Bay is gross.

Wrong! Old Bay makes canned tuna a delight.
