I'm assuming he meant that he didn't want to use CG for the Predators, but old-school physical effects ala Stan Winston.
Rodriguez is actually one of the leading proponents of digital filmmaking. It's cheaper, easier, more versatile, and the equipment is lighter and simpler to handle.
Personally, as someone who's been dabbling with digital video shooting/editing for a while, I can't even imagine how they did it in the old days with film. That shit must have been murder.
