I didn't see the movies until those special edition ones went back into the theater prior to Episode 1. I saw the originals first, then the special edition ones, then the prequels. But that was a significant portion of my life not spent immersed in the Star Wars universe. I think this new one looks awesome.
My girl is a lot more in the same camp as you guys: Very cautious about letting herself get excited for it. I mean, I certainly understand - the prequels should have been a story on their own instead of effectively being 3 crappy special effects displays and serving to show you that Vader was thinking about Samuel L. Jackson right before taking the Emperor out.
I hope it's really good for all of your sakes! I suspect that it will be difficult for it to be anywhere near as bad as the third, which was the "best" of the prequels. There's just no way I can conceive of this being even remotely as terrible as 2.
Teasers have been great so far. Hopefully the original cast doesn't shit up the acting for long. I'm betting on Hamill being great though.

Woah. Now THAT'S what the first teaser should have been!
It actually doesn't look that "star wars" to me, but looks so much better than the prequels.

Star Wars Celebration shows off a number of props. It seems the Rebels are the Resistance and the Empire remnants (?) are called the First Order.
Always two there are, no more, no less. A Boss Hogg and a Roscoe P. Coletrane.
You guys are a lot more forgiving than I am, I'm surprised. It doesn't really matter if these movies are just better than the prequels, they would need to unmake the prequels. Face it, there's nothing cool in the Star Wars universe. Everything that had impact, mystery, or just jolted the imagination has been processed, repackaged, and diminished to the point of total disregard. Everything that made the story special has been explicitly described and commodified, and it is no longer interesting. I mean, what are you looking forward to...just, seeing some Star War'sy stuff on screen? Stuff that has such indelible pop culture presence that it's become its own cliche? I think the setting and themes this universe can approach have become resilient to exploration.
Good characters and good storytelling can make anything worthwhile, even this. But who could these upcoming movies possibly be written for? What audience? I suspect they'll target such a broad demographic (as in, anyone that's heard of Star Wars) that we'll get more middling, design-by-committee projects that cost and make millions/billions but can't otherwise justify themselves.
I'd like to be wrong...but all the series trademarks...Jedi, Sith, The Force, Storm Troopers, 70s era robotics...have become...really dorky.
