Dumb question, but does what you get from carving up a monster have anything to do with where you carve on the carcass?

The only thing that depends on what your carving is the Tail. cut that bad boy off and you get the tail only carves.
Other than that. nope. but breaking parts does increase your chance of getting certain items, and you can only get some items from cuttin tails and breaking parts.
Plates,and rubies can only be carved from tails. but you have a chance (like2%) of getting one in your rewards. Breaking parts also increases rewards gotten.
cand capturing gives you more rewards, and a higher chance of rare rewards.

Right now im hunting the DLC Rust Duramburos. its a king size the thing is super massive. it takes up like all of one area when it does its tail spin. it cant even fit on my screen. so much fun XD

Since the main part of this has already been answered, I will add that capturing a monster instead of carving it can affect the chance of getting certain items and how many of them.

Yeah, from my understanding you can't carve a captured monster but you get a lot more drops (and maybe more rares?) when the quest ends. All I try to do now is capture because of this - even on the kill quests.

Captures have different drop percentages for items. Some items are carve only, some come from breaks like claws or horns, and some are from tails after cutting them off.

I'm sure you can find the actual % pretty quickly. Knowing the drop tables is standard monhun procedure.

To add to what Mzo said, it really depends on what you're going for. Some things can only be gotten from a tail carve, or have such low percentages that you'd need to capture 100 of something to get it. It just really varries from monster to monster and what you need to get from the monster. Depending on what you need, will change what action you take.

So does anyone actually play this on the U? I'm slogging through the Tanzia missions on Rank 5 solo after doing the village quests, and it would be nice to start a G rank team online. I don't know if a team has already been formed as I haven't read too much of the thread.
