Complete overhauls are pretty rare, especially those with REmake's vision and ambition.
I think the significance of REmake is lost now. It was very good because it was completely redone graphically and added new areas/gameplay while still remaining faithful to the original game. Seeing games completely overhauled is common enough now that it doesn't have the same impact.
As for gameplay, the original RE games are almost puzzle games, and more than other series, I think a lot of the draw of the game comes from the system. It was a choice to make ammo, supplies, saves, inventory, cameras etc etc so limited. It did a good job making fairly simple situations threatening and suspenseful. The first hallway with 3 zombies, you're almost definitely going to be bit at least once your first time playing. Opening any door for the first time was a little scary.
But just like a puzzle, once you know everything about the game, it's very easy to plan and execute a perfect playthrough, and I can only imagine that's a really boring thing to watch. I'd recommend that you sit down and play any version of the game, even just for a little while. I think you'd have a much different experience than watching it, even if you turn it off after 5-10 rooms because it's not clicking.

The original DuckTales is a leaner, better game, but there is good reason to play the new one. I wouldn't call it unnecessary.
