The Halo games generally have decent variety in level design so I'm not worried.

Especially after Halo 4, I'm not worried.
Halo 4 was the best looking game of the generation and a completely pleasant surprise.
343 are definitely a talented bunch but they did lose some good key people in Kenneth Scott and Corrinne Yu.
Corrinne in particular was a big reason why the modified Reach engine looked so awesome however with Guardians having a new engine it could be a promising prospect for the game's performance since it seems more geared towards framerate so I'll be very curious to see a Halo game at 60fps. Another possible plus is that Nicolas "Sparth" Bouvier's art direction seems to be pretty consistent with Kenneth's so it'll retain that great industrial/alien structural design.
Seeing the Halo 5 stuff from last night's Master Chief Collection launch event, I'm thinking that I am done with Halo going forward.
But it was a great run! I put in hundreds of hours between Halo 1-4, ODST, and Reach. Fun times.
Why do you say that?
Reach and Halo 4 introduced changes with respect to the multi-player, I played both and enjoyed them well enough, but this features even more widespread change that I'm struggling to see how it serves the franchise instead of the interests of people who had nothing to do with making the franchise great. At no point watching last night's footage did I feel excited to play that game.
In addition to that, I enjoy the campaign and the co-op modes more than the competitive multiplayer (maybe because of the changes instituted in recent games versus Halo 1-3). From what's been said and shown of their plan with Halo 5, and seeing how they handled those aspects in Halo 4 - Spartan Ops, other than the interesting plot point it ended on, was a dud compared to Firefight - first-hand, frankly I don't have much faith in 343 Industries to deliver. I'm sure the visuals will be impressive and the soundtrack by Jinnouchi will be very good, but I don't think much of 343 Industries otherwise.
The disappointments in current games, especially from Western developers imo, don't bother me. As you can certainly attest to, I'm fine with playing other games and revisiting existing games. 343 will put out the games they want to make, I'll play the Halo games that I want to play. It's okay.
I want to tear my hair out trying to play Halo 1-3 now. I say bring that shit on.
I'm sure I'll get re-acclimated to it, but it's not happening quick so far with the MCC.
