Well, It depends if you talking about make-up/prothetics, mechanical, or cgi?
Make up - The Thing still have damn excellent fx work, so does Howling(a full frikin Werewolf transformation, no camera cuts like in American Werewolf), Dead or Alive(Braindead) full on camera zombie grossout fun, many things done by Stan Winston, Rick Baker, Screaming Mad George, KNB studios and other make up teams.
CGI - Starship Troopers(those bugs are still awesome, even 5 years later), Jurasic Park, T2 was revolutionary at that time, Deep Rising and many more.
